Lipases from two New Zealand commercial fish species, Chinook salmon (Oncorhynchus tshawytscha) and New Zealand hoki (Macruronus novaezelandiae) were investigated. The lipases were extracted from the pyloric ceca and purified by affinity chromatography and gel filtration.
